What is in the PSD?

Can I change the text on a layer?

Yes. That layer's region is redrawn and only that region is taken back, the same rule the text editor works by.

What does a separation cost?

It depends on how many layers come back — roughly ¥0.3 per layer. Re-running the same image is free: results are cached on the image itself.
